Craft Taco Truck
When I first met these guys, they had just started serving out of their truck by a craft brewery called “13 Point” in Lemon Grove, San Diego. I remember telling them that they were totally out of our league, lol. You see, in Lemon Grove, we basically have three restaurants and a bunch of fast-food spots scattered around town. Most of the restaurants have been serving the same types of food from the jump… and I mean 20-30 years ago from the jump… there simply was nothing to their food or plating. It was just food.
The owner of the truck, Eddie, explained to me how all of his employees had worked in the industry around town when everyone lost their jobs. When the service industry took a hit after that spiky virus showed its face, this group of guys came together and used their resources collaboratively to start The Craft Taco Truck! The best part about this pivot is that you can tell that they’re excited to service people and really push the boundaries of their plates.
These guys turn out over-the-top tacos that rival some of the more popular Mexican brick mortars in town. I’m happy to work with them and to be a part of their story.
